Easy Chili RecipeI enjoy the flavour and texture of this easy chili recipe. The chili is not too spicy and contains only healthy fats (avocado).

This easy homemade chili has only a few ingredients, and it is relatively easy to prepare. I usually get three meals out of it.

This dish is also very high in protein. One serving contains over 40 grams.

You will need the following ingredients for this easy chili recipe:

  • Five cups of water or vegetable broth
  • One chopped medium yellow onion
  • One large chopped red bell pepper
  • Five diced garlic cloves
  • Three teaspoons of Mexican chili powder
  • Four hundred fifty grams of red lentils
  • Three Roma tomatoes
  • A quarter cup of chopped fresh cilantro

Topping:

  • Half of a medium-sized avocado
  • A quarter cup of cilantro leaves

For this easy chili recipe, I use a stainless steel pot with no oil. I use only water to cook all the ingredients.

Add one cup of water to a large pot add place over medium heat. When water becomes hot, add the chopped onion, bell pepper, and garlic. Cook for 10 minutes, or until pepper and onion become soft. Remember to stir occasionally.

Now add the chili powder and tomatoes and cook for an additional five minutes. Finally, add the lentils and the remaining four cups of water. The water should cover the ingredients by approximately one inch.

Bring the combined ingredients to a boil, reduce heat to medium, partially cover and let simmer for 10 to 15 minutes. Now add the cilantro and cook for additional two minutes. Remove from heat and wait a few minutes before serving.

To complete this quick easy chili recipe add the avocado slices and cilantro to the top of the chili.

I usually also have chopped apples and homemade spelt biscuits with this dish. The spelt biscuits are very easy to make and only contain five ingredients. A cup and a half of spelt flour, two teaspoons of baking powder, water, salt, and pepper to taste. I don’t use any oil in the recipe, and I place them on parchment paper and cook for 11 minutes in the oven at three hundred seventy-five degrees Fahrenheit.
